Chicken and black lentils soup



Ingredients:

150 gram chicken breast
3/4 cup black lentils
1/4 cup rice
3 cups of water
1 medium size carrot grated
1 medium size onion finely chopped
3 crushed flakes of garlic
chopped spring onion
Salt to taste
Oil for cooking

Methods:
Cut chicken breast into small cubes
Heat a pan, add a little oil and stir fry chicken with some salt
For 3-5 minutes let it cook until golden

For the soup
Heat a pressure cooker on medium flame
Heat 1 table spoon of oil
Add onion and ginger
Let it change colour
Add 3 cups of water and let boil
Then add lentils and rice with salt
Close pressure cooker and let boil for approximately 8 minutes
After 8 minutes, see if both lentils and rice are well cooked and have a creamy texture

Turn on slow flame
Add carrots and cooked chicken
Let it cook for another 5-10 minutes on slow flame
Add spring onions chopped on top

Note: if water is reduced too much while boiling the lentils, please add some according to your judgment


Ready to serve hot
Serving suggestion: eat as it is with some chili sauce or with bread
